Heat 1 cup sugar and 1 cup water in a pot and stir until dissolved.

Add 2 tablespoons chamomile flower tea, and one chopped jalapeno.

Simmer (small bubbles) for 20 minutes.  Strain and cool.

Build the Cocktail

Using your favourite cocktail shaker, measure:

1.5 oz Tequila  (we like Reposado, but any fine tequila will work)

1 oz Chamomile Jalapeno Simple Syrup

.75 oz Freshly squeezed lemon juice

Shake with ice, serve ‘on the rocks’ or strain into cocktail glass.  Garnish with a few chamomile flower heads (fresh or dried) or fresh cut lime wedges.  Enjoy!

Non – Alcoholic Option

Omit tequila, double the amount of simple syrup and lemon juice, top with soda, and serve in a tall glass with a citrus garnish.
